Happy New Year! It’s 2016!!
I hope you all had a safe, fun celebration and that you’re starting your year off on a positive note.
A couple of years ago, my husband and I started a little tradition by hosting brunch for our parents on New Year’s Day. That first year, we had just moved into our house four days before and the place was a mess of half unpacked boxes, so needless to say it’s gotten less stressful as we go.
None of our parents are vegetarian, let alone vegan. I’ve been cooking for my parents since I went vegetarian 17 (!!!) years ago, but I’m still a little intimidated by cooking for his family. So when his father hit the kitchen and came back with a second totally full plate, I was literally giddy.
I know that it can be hard to come up with menus that will satisfy everyone’s palette, especially when you’re new to vegan cooking, so I’d like to share one of our menus with you!
